Enjoy Egusi soup with any side of your choice. ( Fufu, rice)

Ingredients
  • Whole Egusi
  • 1 Red onion
  • Palm oil
  • Beef Stock
  • Crayfish
  • Smoked fish
  • Stock fish
  • 2 Bell Pepper, 5 Tomatoes
  • Assorted Meat
  • Spinach (optional)
Instructions
  1. Blend the whole Egusi with onions and little bit of water.
  2. Heat up palm oil in a pot
  3. Pour in the Egusi paste and stir, till all the palm oil has been absorbed
  4. Fry on medium heat until Egusi begin to curdle.
  5. Keep frying until the moisture begins to evaporate and the Egusi becomes thicker.
  6. Blend the pepper, cook it , and fry with palm oil, until the water evaporate.
  7. Combine the Egusi and pepper, and continue to stir for some time.
  8. Add spinach , beef stock, crayfish, assorted meat, shredded stock fish and stir. Taste for salt and seasoning cubes.
  9. Let it cook some more, until big bubbles begin to show up in the Egusi, and it gets thicker.
