ISLAND CANDIED PEPPER
- 10 Habanero peppers
- 1 Cucumbers
- 2 Carrots
- 2 Onions
- 2 Garlic cloves
- 1 Liter of white vinegar
- 10 cloves
- Peppercorns
- Salt
- Peel carrots, onions and garlic
- Chop onion and cucumber carrots
- Crush the garlic
- Cut the peppers in half and remove the seeds
- Put by layer the vegetables and herbs in a tightly closed jar
- Season with salt and cover with vinegar
- Leave it aside for 2 weeks before using it for the first time
- Keep candied pepper in the refrigerator
This pepper sauce is to taste like Tabasco except it's really strong.
Enjoy with all dishes: grilled meats, rice, roots.
