Enjoy Egusi soup with any side of your choice. ( Fufu, rice)
Ingredients
- Whole Egusi
- 1 Red onion
- Palm oil
- Beef Stock
- Crayfish
- Smoked fish
- Stock fish
- 2 Bell Pepper, 5 Tomatoes
- Assorted Meat
- Spinach (optional)
Instructions
- Blend the whole Egusi with onions and little bit of water.
- Heat up palm oil in a pot
- Pour in the Egusi paste and stir, till all the palm oil has been absorbed
- Fry on medium heat until Egusi begin to curdle.
- Keep frying until the moisture begins to evaporate and the Egusi becomes thicker.
- Blend the pepper, cook it , and fry with palm oil, until the water evaporate.
- Combine the Egusi and pepper, and continue to stir for some time.
- Add spinach , beef stock, crayfish, assorted meat, shredded stock fish and stir. Taste for salt and seasoning cubes.
- Let it cook some more, until big bubbles begin to show up in the Egusi, and it gets thicker.
