Ingredients
- 1 Whole Hen with Bone and Skin
- Marinade (Extra Virgin Olive Oil, Garlic, Salt, Ginger, Oregano leaves, Parsley, oinion, black pepper, habanero pepper, Rosemary).
Instructions
- Place a whole Hen breast-side down on a cutting board.
- Starting at the thigh end, cut and remove the backbone of Hen with kitchen knife.
- Flip the Hen over and press firmly on the breastbone with your hands to flatten it.
- Rub whole Hen with marinade. Then Put Hen in a cast iron skillet or pan. Surround with onion and carrot marinated with Dijon mustard and lemon juice.
- Put the skillet in an oven and let it roast for about an hour.
